        The Onion (Allium cepa) is wildly cultivated vegetables of the Allium family. Since ancient times, onion was heavily used as an edible and medical remedy across the globe. Onion creates a large source of food and prevents thirst and a great source of energy. The unique flavor of the onion is the primary reason for its widespread and popularity. Further, it grows in mid dry weather and on most of the variety of soils, and hence, it is cultivated in almost all areas of the Indian subcontinent.  India is one of the biggest producers and consumers of fresh onion.

        For preserving the onion for a longer time, the fresh onion bulb is processed via the air-drying process, and the final product is commonly known as dehydrated onion or dried onion. This dried onion is utilized as an alternative to the fresh onion for adding the aromatic flavor in the cooked and backed food dishes. The dried onion also reduces the food preparation time and avoids the teary eyes while chopping. The Dehydrated onion is also a great source of Vitamin C, dietary fiber, and folic acid. Additionally, they offer various minerals, such as potassium, magnesium, calcium, and phosphorus.         In the beginning, the fresh onion is washed using the hypo treatment to reduces the bacterial content before processing through the chopping/slicing machine, and thereafter, the chopped onion is dried at the different stages using the convection heat process at 40 to 55 ˚C by circulating hot air at 140 oC to 160 oC. Later, the dried onion is processed through a bin dryer to further reduces the moisture level. Finally, it is processed through the air cooling system to bring the temperature to 20˚C. The roots and skin from the onion flakes are removed by automatic-sorting machine and by manual hand shorting process. For removing unwanted impurities from the final product, metal detection is also carried out before processing the fresh onion and at different processing stages. Further, the metal detection is also carried out before the sorting process of the dried onion. This sliced dried onion is widely recognized as the dried onion flakes or simply onion flakes. The usual size of onion flakes is about 8 to 15 mm in length.

        The Dehydrated onion flakes are manufactured from white, red, and pink onion raw material. Among the three types, the dehydrated white onion flakes are vastly popular in the world (mostly in the European nations, America, CIS nations, Assia, and Middle East Africa) due to its sweetish and spicy aromatic flavor. The dried flakes have a shelf life of more than 2 years at 10-15 oC without any noticeable reduction in flavor. However, the color of the white onion flakes changes from creamy white to yellowish-white. Many clients also prefer the red onion flakes and pink onion flakes due to its lower price as compared to white onion flakes.
