        For preserving the garlic over a longer time, the fresh garlic bulb is processed via the air-drying process, and the final product is commonly known as dehydrated garlic or dried garlic flakes. Initially, the fresh garlic is washed using the hypo treatment to reduces the bacterial content and then processed by the chopper/slicer machine. Thereafter, the sliced garlic is dried at different stages using the convection heat process at 40 to 55 ˚C by circulating hot air at 140 oC to 160 oC temperatures. Finally, it is passed via the air-cooling system to lower the temperature to 20˚C. This dried garlic is widely recognized as the dehydrated garlic cloves or simply garlic cloves. The dehydrated garlic flakes are vastly popular globally (mostly in the European nations, North America, and Middle East Africa) due to its strong and spicy aromatic flavor. The dried flakes have a shelf life of more than two years at 10-15 oC.
