        The peanuts (also called groundnuts) are world-famous nutty snacks that can also be used to prepare creamy butter desserts. These are also cooked frequently as a component in vegetable or special rice dishes. The scientific name of the peanut is Arachis hypogaea, which belongs to the legume or "bean" type Fabaceae family. It originated from South America and spread across the globe by Spanish traders. In the early days, the peanut was mainly treated as a replacement of cocoa and used as food or to extract the oil. It has a unique sweetish creamy, distinguished delicate nutty taste and a great source of protein. However, removing its shell cover was quite tedious. With advanced processing machines, the extraction of peanuts becomes easier. About 75% of the top Bold groundnut crop is produced in khariff season (during June - September) and the rest 25% in rabi season (during November-March). About 70% of winter peanut crops are of bold variety. The kernels (nuts or seeds) of the Runner/Bold peanuts are small in size that is covered with a red-skinned layer and has an elongated shape. The oil content in bold peanuts is relatively high, i.e., more than 25% approximately, in comparison to Java peanuts. In India, the bold peanut is one of the majorly cultivated oilseeds. In total, it accounts for around 25% of oilseed production in the country.

        The groundnut plants are soft, bush-like herbs grown up to 30 to 50 cm tall. The peanut plants usually take about 90- 110 days to attain full maturity and ready for harvesting. The plants are dug up carefully, and the harvested crop is collected in small heaps using the groundnut harvesting machine and left under the sun for 7 to 10 days for curing. Post curing, the peanut shells are detached or separated from the plants using the groundnut plucker machine, dried properly under the sunlight, and taken for further processing.
