Java or Spanish peanut plants are scientifically named as Arachis hypogaea, which belongs to the legume or "bean" type Fabaceae family. It originated from South America and spread across the globe by Spanish traders. In the early days, the peanut was mainly treated as a replacement of cocoa and used as food or extract the oil. The Spanish/Java groundnuts are extensively popular due to the eye-catching size of their kernel. Its nuts or seeds have pink-colored outer skin with a round spheroidal shape. These are extracted and treated using advanced processing machines. It has relatively lower oil content compared to the bold peanut variety and has a huge amount of protein and high concentrations of polyphenol anti-oxidants. It is used for snacks as roasted, spicy, and salty nuts, extraction of edible oil, and peanut butter candies for its sweet taste and crunchy texture or even as cooked meals like vegetable pulao or fried rice having a refreshing scented taste and sweet-aromatic odor. The high nutrient content makes it suitable for several medicinal applications and provides many health benefits. The resveratrol is an anti-oxidant present in Spanish peanuts that helps to prevent heart strokes by enhancing the production of nitric oxide. It gives a refreshing mood, boosts positive feelings, and acts as an anti-depression agent. It also functions as an anti-aging phytochemical. India is the second-largest peanut producing and consuming country. The western states of India, viz., Maharastra, Gujarat, Rajasthan, and southern states, viz., Andhra Pradesh, Karnataka, and Tamil Nadu are the major peanut producing states in the country. The shelf life of peanuts is around 6 to 9 months.

The Java peanuts or groundnuts are widely used in the food industry due to its creamy butter-like taste that adds refreshing savor to any dish. The Java Peanuts are also known as Spanish peanuts that are grown in summer due to relatively low water/irrigation requirements. Approximately 85% of peanuts crops that are sowed in spring or pre-summer season are of Java variety. The majority percentage of these Java groundnuts or Spanish groundnuts is primarily used to prepare peanut butter. This variety of Indian grown peanuts is well-positioned around the globe for its rich creamy taste and high value of nutrition.

The java groundnut plants are soft, bush-like herbs grown up to 30 to 40 cm tall. The peanut plants usually take about 80- 100 days to attain full maturity and ready for harvesting. The plants are dug up carefully, and the harvested crop is collected in small heaps using the groundnut harvesting machine and left under the sun for 7 to 10 days for curing. During post-curing, the pods or the peanut shells are detached or separated from the plants using a groundnut plucker machine, dried properly under the sunlight, and taken for further processing. The nuts of Java peanuts are relatively smaller in sized than those of the Bold peanuts, and the outer shell is thicker for Java peanuts compared to the Bold peanuts.
