Fenugreek plant is scientifically known as Trigonella foenum-graecum L. is an annual herb with tender green leaves and cuboid, amber-yellow seeds or fruits. It belongs to the Fabaceae family and popularly also called “methi”. The early human population has identified the nutrient values of fenugreek as a perennial plant having multiple usages. The dried and fresh leaves are used as an herb, fresh sprouts with leaves and flowers as a vegetable, and the seeds as spices and preservatives. The fenugreek plant gives a fragrant aroma that is similar to clover. Its flowers are bloomed in summer into tiny, yellowish-white colored and aromatic scent. After the drying and falling of the flowers, at least 10-15 brownish-yellow seeds appear from its long and thin seed pods. The Fenugreek seeds are slightly bitter and spicy in flavor. The well-known fenugreek fries, as well as potato-fenugreek curry, is prepared using both fresh and dried leaves. The green fenugreek and sprouted seeds are also suitable for making healthy salads. In India, the fenugreek plant is one of the favorite vegetables that are even used to make parathas and chapatis. Almost all the states of India are involved in farming and consumption of fenugreek.

The fenugreek plants are soft and hairless herbs that grow up to 12 to 14 inches in height. The fenugreek plants that are sowed for seeds are generally matured within 3-4 months from sowing to ripping of seeds, and it is harvested when its flowers get dried and fall. Fenugreek seeds are cuboidal shaped and dry, having a diameter of 3–5 mm.  The farm laborers gather the fenugreek plants by pulling the plants off the ground using the harvesting machine. After drying the harvested plants for a week under sunlight, the fenugreek seeds are separated by shaking the dried plant with hands. The collected fenugreek seeds still contain some impurities like dry leaves, small branches, grass, and plant dust or its broken stems. These impurities are segregated via a huller or husker machine. The segregated fenugreek seeds are processed vis the sorting to get the best quality of fenugreek seeds with the highest purity level. Thereafter, a metal detection procedure is considered for detecting the presence of any metal elements. At last, the purest fenugreek seeds are then sent for final packaging or processed further for obtaining the fenugreek powder.
